Bison is according to the Buffalo Gal website a lean and low calorie meat option with only 142 calories and 2.42 g of fat for a 3.5oz portion of bison vs 211 calories and 9.28 g for fat for the beef equivalent.

The Marketplace also stocks Buffalo Gal’s Bison Ground, Bison Patties, Bison Roast and a variety of Wild Boar products. Check out the Buffalo Gal Website for the complete product line.

Ever wondered if buffalo and bison are the same animal? According to Jeanna Bryner (Life’s Little Mysteries) early American settlers called bison “bufello” due to the similar appearance between the two animals, and the name “buffalo” stuck for the American variety. But it’s wrong. Bryner explains “the American bison (Bison bison) lives only in North America, while the two main buffalo species reside in Africa and Asia.”

Mystery solved! Enjoy a healthy portion of bison soon!

Ever tried to enhance your soil by transferring live worms into your garden? From experience, I can tell you it is rather tedious, slimy and time consuming plus I am not so sure they stay put. One of the big benefits of having worms in the garden is their excrement. Rather than convincing worms to live in your garden, just add ready to use worm castings, sold now at the Marketplace. In time, with this kind of improvement, worms will find your garden an enticing place to dwell in and continue the job of soil improvement.

Worm castings are basically worm manure and what makes this soil enhancer so valuable are

the soluble plant nutrients and growth enhancing compounds

a diverse and populous consortium of microbial life and a substrate of organic matter harboring an abundance of nutrients that are not lost to rain and irrigation

an ongoing source of reliable food when bacteria and microscopic fungi feed on the organic matter thus releasing some of the nutrients to the soil and storing others for their own energy and reproduction

absence of smell

the lack of harmful “burning” of plants

easy to work with texture (much like peat)

How to use worm castings:

Work them into new plantings as you would compost to improve soil structure, and to increase moisture and nutrient-holding capacity. In existing perennial borders, vegetable gardens and around fruiting trees and shrubs, apply castings 1 inch deep in spring and work into the soil 3 inches deep. The castings will provide all the fertilizer most of your plants will need for the season. To help bring dried-out lawns out of dormancy, top-dress as soon as possible with a 1/4-inch layer of castings. The fall rains will wash the minerals and nutrients into the root zone, and the microorganisms will help bring depleted soils back to life.

Enjoy your garden, even in March… in Minnesota!

Happy Valentine’s Day!

To sweeten your day, try this delicious appetizer (or even a main snack).

Brie with Spiced Honey & Black Walnuts

2-4 hours before serving, set brie out and allow it to come to room temperature

and mix together the honey & spices to allow mulling of flavors.

Large wedge of brie

½ c. natural (not ultra filtered) honey*

1 T. dry mustard seeds (mix tiny reds, medium browns, a few large white if you have them)

Large pinch of ground cloves

Very small pinch of ground nutmeg

Salt & fresh ground pepper to taste**

⅔ c. black walnut pieces

While cheese warms on the counter,

mix cloves, nutmeg, salt, pepper and mustard seeds into honey.

Let honey and spices mull, stirring occasionally.

Just before serving time, mix black walnuts into honey.

Top cheese with honey/nut mixture at the last minute.

Serve with crackers and/or crisp bosc pear or apple slices.

*Since crystallized is less runny, this recipe is a great way to use up grainy honey. Can add a bit of fruit juice to provide enough moisture to soften mustard seeds. Also, good local honey that has not been processed or filtered contains lots of nutrients that are nullified if heated above 120 degree F. Eating it raw gives you the full benefit of extra nutrients in good local honey.

** Salt and fresh ground pepper add contrast and complexity to the sweetness of the honey, so be generous with these.

Courtesy of Kitty Baker who delighted everyone with this treat at the Eat for Equity event last Saturday!

My comment was: So?

Valentine’s Day, like Mother’s Day or birthdays, involves a lot of commercialism. But would you really “think” of the special people in your life without a little push from the side? Here my husband states the obvious: “But I appreciate you all the time. ” Well, I sure hope so, but visual reinforcement would be nice every now and then. Who in their right mind would turn down a gift, card, or even a thoughtful gesture. Let alone travel arrangements to a location with an ocean view (still waiting for this one!). These gestures never fail to make me feel appreciated and happy.

I like to think of these special days as appreciation deadlines. For most of us, it is probably about time to do something which sets this day apart from all the others. With a little pressure from the calendar, appreciation may become a “to-do-list” item: plan an interesting day, a few hours, or even a special moment.

Chore or not, the efforts will pay off. Even the fact, that someone thinks you deserve all of the attention, that he/she searched for a great restaurant, event to attend, or a deal on the biggest bouquet of flowers you could probably “waste” your money on, makes a caring statement.

Valentine’s Day is like hitting the reset button: Stop all other applications, and just choose one – Make someone feel good!

Here’s an array of options to achieve just this (in no particular order):

Make travel arrangements… You don’t have to travel this minute, but a confirmation code in a pretty card will get the point across.

Dinner out is okay for her according to polls, but men don’t list a romantic candle lit dinner as a top thing to do. So try maybe something out of the ordinary:

Picnic on top of a look-out or by the frozen river while sipping hot mulled wine or Mojo Coco hot chocolate. Miraculously you present your mate with wonderful local snack foods such as crackers, organic tortilla chips, salsa, almonds, cheeses, dried fruits and chocolates in the appropriate heart shaped box…

You can’t go wrong with Breakfast in bed, especially if you hide a little something under the toast. Lanesboro Local has these amazing pancake mixes, specialty syrups, Sturdy Wheat Hot Cereal, 8-grain cereals and very neat pottery bowls to go with it! And of course, an array of options that hide nicely under the toast…

Guys should CAtB – Cover all the bases: The card, the chocolate, the piece of jewelry (you can be done with this in 5 min flat)

Gals: Beside the obvious easy “gift”, you can show your appreciation with a new handcrafted fishing pole, a few new spinners, or a cast iron fish sculpture.

Or something very special: Cook a hearty meal for him such as buffalo roast with Tequila Lime BBC sauce wearing a funky new apron while playing Garth Brooks “Nothing but an apron on…”

Or simply order the best truffles in SE Minnesota at the Marketplace now. Costa Truffles will be available on Feb 10 and 11. Call 467-2944 for more info

Something super easy: Place a bag of Barsy’s Almonds in her handbag, on the nightstand or in the car for the commute… Choose from Sweeties, Naughties, or Hotties. You make the call!

Nothing strikes your fancy yet?? Really! Well, there might be more soon!

Eat for Equity is coming to cook up a local feast in Lanesboro, to benefit Lanesboro Local’s Marketplace.

You may have read about this incredibly fun and conscientious non-profit funding-raising group based in Minneapolis. Founder Emily Torgrimson and board vice president Laura Nethercut both grew up here and attended Fillmore Central, Class of 2002. The Eat for Equity concept is simple. They organize volunteers to prepare a special meal, tied to a cause, engaging the generosity, ingredients, cooking skills and good will of many individuals to raise funds and create a better, more equitable world.

Eat for Equity has volunteered to put on a pre-Valentine’s Day spread of locally produced delectables in Lanesboro. The dinner will benefit Lanesboro Local, which helps rural southeastern Minnesota growers, producers and artisans secure better opportunities to produce local goods and find local markets for their products.

The evening begins at 6:00 pm on Saturday, February 11, at the home of Peggy Hanson and Frank Wright at 500 Calhoun Ave S, Lanesboro (formerly the Cady Hayes Bed & Breakfast establishment). Drinks and dinner will be prepared and served by volunteers.

The Eat for Equity message is, “Come as you are. Give what you can.” Participants will be helping to strengthen our rural communities while enjoying a delicious feast of cooked-from-scratch local food. Who knows? Such good eats may cause you to imagine a bigger role for local foods in your household. Good folks, good food, good times. All for the greater good.

A $20 donation at the door is suggested, or a higher level of generosity if it suits you, to raise funds for Lanesboro Local to sustain its programs and the Marketplace. Reservations are encouraged. Email info@lanesborolocal.org or leave a message at the Marketplace, 507-467-2944. Better yet, stop in at the Marketplace and sign up, from noon to 6 PM Wednesdays, Fridays and Saturdays through the winter.
